Wassail comes from the Anglo-Saxon phrase 'waes hael', which means 'good health'.
During traditional wassailing a communal wassail bowl – filled with a warm spiced cider, wine or ale – would be shared amongst revellers after a traditional carol was sung. The Lord of the house would toast the health of those present by yelling "waes hael", to which would be replied "drink hael"!!
